Ceylon cinnamon (Cinnamomum verum, "true cinnamon") is the cinnamon grown in Sri Lanka. Its quills are made of many thin, paper-like layers rolled together, light tan in colour, with a mild, sweet aroma.
Cassia (Chinese, Indonesian or Vietnamese cinnamon) is a different species. Its bark is a single thick, hard layer, darker and stronger tasting, and it contains much more coumarin than Ceylon cinnamon. That is why many buyers specifically look for Ceylon cinnamon.
Ceylon cinnamon is graded mainly by quill thickness: Alba is the finest, followed by the Continental (C), Mexican (M) and Hamburg (H) groups. The table above shows how the price falls as the quills get thicker.
